I prefer soup for dinner, but i enjoy it too... My favorite is mushroom soup, but i love mushrooms. I like fish soup too, and bisque de homard (sorry, i know only the french name). But i'd give everything to be able to eat some cress soup made by my great-grandmother, like i used to eat when i was a little kid. She used fresh cress from her garden, and when served in the plate she add a spoon of cream... It was yummy!
I love soup too, all kinds of soups. Except for those with big chunks.
ReplyDeleteMy mother makes a lot of soup: broccolicreamsoup, spicedmushroomsoup, leeksoup, onionsoup, chicorycreamsoup with shrimps, fennelsoup, tomatocreamsoup with little meatballs... They are delicious!
I will try to type one recipe out, my mother has all the recipes (they are originally from my sisters cookinglessons that she followed some years ago). So let's try to translate one from Dutch into English.
Here is the recipe for the spicemushroomsoup for 4 people:
-1 onion
-250g mushrooms
-45g butter
-30g flour/flower (don't know the correct spelling, but I don't mean flower like a rose ;) )
-1l chickenbouillon (or 1l water + 2 little blocks of chickenbouillon)
-125g spice cheese (like Boursin)
-peper and salt
-finishing touch: chive, parsley...
Method of working:
-peel the onions and cut them into fine pieces
-cut the mushroom into fine pieces
-melt 15g butter, stew the onions and mushrooms
-then melt the other butter (30g) into it and mix the flour/flower through it
-mix the chickenbouillon through it
-let the soup boil, when the soup is boiling: let it boil further with half of the heat untill the vegetables are completely cooked-trough
-add the spice cheese and mix this until you have a flat soup (sounds weird, but this is what the recipe says :) )
-add peper and salt like you want
-finishing touch: cut the chive, parsley fine and straw it on your soup (you can also put bigger pieces of mushrooms in it)
(I tried to translate it with a dictionary, hope you understand and that it doesn't sound to weird ;) )
I can always translate another one, if you would like. Just let me know. I like to do this, I can practice my English with it ;)

Soppa är väldigt gott, speciellt på vintern :) Tänkte själv göra soppa idag också. Jag brukar göra grönsaksoppa (är vegetarian) på: potatis, kålrot, morötter, purjolök, blomkål och mungbönor. Och grönsaksbuljong, det brukar bli väldigt gott faktiskt :)

I love pea soup and cabbage soup but not from a normal cabbage but from, how to say it from "source" cabbage. Here it is kind of cabbage that almost every family is making for the winter. I have my special recipe.
ReplyDeleteyou need: tomato pasta, sausage, source cabbage, onion, oil, pepper, salt, red paprika (spice)and mushrooms.
Cut onion into pieces and put it into the hot oil, fry it for 2 minutes, then add a cabbage and fry for 3 minutes, then add water. Cut sausage into pieces (little circles) give into the 'soup' then add red paprika and tomato pasta. Later add salt and pepper and mushrooms. Cook it until it boils and continue for 1 hour from the point of boiling.
At the end, it is always good to give a time to soup, cause it is the best after cooking day . That's why it is made for Christmas dinner. On 23 of December you cook and on 24 of December you served.
For the first time I write recipe and never more ;o)

Hi Anette. I like fish soups and meat soups (with slices of ham and boiled egg specially). But my favourite soup is the one called Garlic Soup. Its main ingredient is not garlic, it's basically boiled egg, fried bread and a couple of things that I can't remember right now.

I also love "Pão de queijo" (cheese rolls), it's a typical brazilian food, one of my favourites!

On sundays or celebrations in the family we often eat chicken soup.
My favourite soups are the bean soup and the sour cherry soup. I love it's sweet and sour taste and it's easy to make: you put some carrots into boiling water, which you have cut into pieces and let it boil.You can also put other vegetables beside the carrots.
When it's almost bioled you add the sour cherries and cream and boil it a little more until the cherries and carrots are ready. You also have to add a little salt and sugar. At the end you add cream mixed with an egg yolk and parsley leaves, which you cut very very small.
I've listened to the song you sang with the boys from Mustasch at the gala and it's really nice!
Today I am also relaxing at home, because yesterday I had a super big exam and during the last days I've been learning and exercising so hard. Fortunately everything went so great!

One of my favourite things to do is go hiking or walking in winter - and I take a flask of soup with me - its sooo lovely to be warm and cosy when all around you is cold and somehow food always tastes better outside. I really like to take just plain vegetable soup or tomato with a nice bit of crusty bread - but my Dad also makes a great Borsch!

Have you ever tried that japanese soup? That one made of soybean paste, with (sometimes) soybean cheese, seaweeds, mushrooms... ?
You just need to boil the water, put whatever you want (soybean cheese, mushrooms, onions, fish etc) and then the soybean paste.
Salt or any other condiment is not necessary, but if you want you can add a seasoning made of fish. Meat doesn't taste right in this soup, the less things you put is the better.
That's pretty easy to prepare, so that we have that for lunch or dinner almost every day.

cook a chicken with water and boil rice in an extra pot. Then do the chicken out of the water and eleminate its bones. Throw cutted vegetables (leek, carrots and celery) into the water and spice that with soup-cubes (We at least call those ready spiced things "Suppenwürfel"), Salt and Pepper, then throw the meat to that all and boil it. After that throw the rice into the soup. Then you can eat that. Is especially good if one caught a cold.

as for my fav soups...well, I very much appreciate cream-soup with champignons and chicken and smth more "light" like bouillon with different additives like eggs and green onion or meat balls. Perhaps the most famous russian soup is borsch. You can add sour-cream or mayo to it, it depends on your taste.
recipes are all very different and hard to explain since I'm not so familiar with english cooking language, so that's why I'll provide you with a link to diff recipes http://www.cdkitchen.com/recipes/cat/780/
I looked through all of them and I can say that I do not always use vinegar and garlic. Perhaps, it also can depend on your taste. And btw tomatoes can also be excluded (e.g. in case you have some gastric acidity), and don't worry, it wont's hurt the color of the soup, it mostly comes from beets than tomatoes :)
I'd recommend pork with bones as a base for broth. And all vegetarbles, especially beets and cabbage are desirable to be fresh, it gives a richer taste :)

I love soups, I make them all the time as I'm trying to loose weight and a vegetarian nothing beats a low fat soup. I don't normally follow a recipe, I just throw any bits of left over veg into a pan with some veg stock and maybe some beans, lentils or pulses and cook until done then blitz in blender and hey presto a filling soup that will last me for my dinners for a few days and hasn't cost me much money to make.

Recipe:
3/4 teaspoon of finely chopped ginger
2 packages of imitation crab
2 teaspoons of cornstarch
4 teaspoons of water
3 cups of chicken broth (for those that are vegetarian, they have imitation chicken broth that also works well)
2 cans of creamed corn
1 teaspoon of soy sauce
1 teaspoon of worcestershire sauce
white pepper (add to taste)
You bring the chicken broth and cans of cream corn to a boil, then add the soy sauce, worcesterhsire sauce and white pepper (all to taste) and then add the crab meat.
It's sooo good =)

ReplyDeleteI don't know how "special" this soup recipe will sound to you, but mom did it yesterday and it turned out absolutely delicious, even though I'm not generally a fan of soups.
It's plain chicken breast that you chop in tiny pieces, add one grated carrot, a parsnip and some celery and some sort of "sauce" made of one egg yolk, sour cream and lemon juice. I can't tell you exactly how she did it and the exact proportions of each ingredient, but it's some sort of sour soup, so lemon is very important. And so nice for you, that your boyfriend prepared the soup today. :)
I'd also kindly ask you, just like Bonome did, to share some pics with us, if it's okay with you and you have some that you could "make public". I wouldn't want to be intrusive though, so whenever you find anything that you think you could show us, that would do. :D

ReplyDeleteMy mum loves to make soup, I remember among all her recipies the best ones were what she called the 3 C soup, madeof coconut milk, carrots and curry it´s delicious!
I also love a cold soup she made when I was living at hers : a cucumber and mint soup, very good too!
And finally the best one: it´s made with a lot of vegetables that you cook: carrots, brocollis...and with what we called ravioles, a french dish(it looks like ravioli but smaller) filled with a french cheese inside and some herbs, it is very good!!

ReplyDeleteWe love soups in Poland. My faves are mushroom soups, potato soups, tomato soups. I pretty much like all kinds of soups. Love pea and fish soups!
Here is a recipe for a Polish fish soup:
Filet a 1 kilogram carp, pike or perch and cut the fillets into small pieces.
Cook 50 grams dried cepe mushrooms in 6 cups of vegetable stock.
Add fish and cook about 30 minutes.
Melt 35 grams of butter in a pan. Add 1 cup of liquid from the fish and mushroom pot. Heat to boiling. Make a thick gravy by stirring in about three tablespoons of flour.
Add the gravy to the fish and mushroom pot.
Spice to taste with salt, pepper and nutmeg.
Serve with noodles.
Yummeh!
Sauerkraut soup "Kapuśniak"
1 large can sauerkraut
1 large head cabbage, chopped
1 large onion, chopped
2 large whole potatoes, peeled
2 tablespoons barley (optional)
2 tablespoons bacon drippings
1 10-ounce can tomato juice
Drain sauerkraut and save juices. Rinse sauerkraut in cold water, drain and squeeze it, saving the water squeezed from the sauerkraut.
Combine sauerkraut and chopped cabbage in a large kettle or Dutch oven. Cover completely with water. Then add an additional quart water. Add the chopped onions, whole potatoes, barley and bacon drippings. Cook at least one hour.
Thicken soup by making the following brown sauce:
2 to 3 tablespoons bacon drippings
1 small onion, chopped
3 to 4 tablespoons flour
Saute onion in bacon drippings; blend in flour and cook until brown. Season with salt, pepper and paprika.
When brown, remove a couple of ladles of soup from pot and add to brown sauce. Cook, stirring constantly, until sauce comes to a boil.
Transfer thickening into the soup through a strainer, catching the onion. This guarantees a nice, smooth thickening. Add tomato juice to the soup and stir well.
If you want the soup to have a more sour flavor, add a ladle or two of the juice from the sauerkraut and the squeezed water. If you prefer a sweet-sour flavor, add about 2 tablespoons sugar.
Cook soup an additional half hour. Remove potatoes; put through strainer and return to soup. This thickens soup a little more. Serve hot.

ReplyDeletewhile cooking I remembered about two more recipes))
First one is more Ukrainian than Russian one, but I think it doesn't matter that much)
It's a soup with gnocchi from eggs and flour.
It is quite easy and quick to do. First of all you make a bouillon (I think chicken will suite the most, it is not so fat as pork and etc and gives a nice taste). Than you chop 1 carrot and 1 onion and fry them in a pan till they get this light golden color. Add them in your chicken broth and let the bouillon simmer.
While the broth is cooking you can make gnocchi. Take 2 eggs and beat them. Put a little salt and add a couple of tablespoon of flour and mix it together using a fork. The whole mass should have consistency of thick sour-cream.
Then the final step: tale a teaspoon and a glass of water. Get a little dough on a teaspoon (less than half of spoon) and put it into the bouillon very fast. Than dip a spoon into the glass of cold water (make it everytime after dropping the dough into the broth) and start "working" with dough again. After you finish it, let the soup boil for about 5 minutes (till all the gnocchi come up) and that's it :)
the second recipe is a bit more complicated, but the result is just brilliant, imo, especially for such a cold winter as we now have :)
For Rassol'nik you'll need:
1 [swedish] pound (or a bit more) of beef
1 onion
half glass of pearl barley
3-4 marinated middle-sized cucumbers or 10-12 little cucumbers (they're usually more crunchy and has more vinegar in them, so they're spicy)
2-3 potatoes
1 glass of cucumber pickle
1-2 bay leafs
salt
some parsley, dill and celery
Cook beef in 3 litres of water. To the broth you may add 1 whole carrot and a little bit of parsley and celery (do not chop them). When broth is ready, pass it through a sieve, take off the roots and cut meat into cubes.
Cook pearl barley in another pan. It usually takes a long time to cook it so start making it beforehand.
Chop the potatoes into small bars, chop onion and put it into the boiling broth together with the already cooked pearl barley.
When potato is ready, put the chopped cucumbers into the soup and cook it for 15 minutes.
Then put in the glass of cucumber pickle and taste it. If needed, put some salt, after that bay leafs. Soup is ready.
Serve it with choked parsley and dill and sour-cream (it depends on your taste, you may not add anything).

ReplyDeleteMissed you those couple of days you weren't on but I know you're a busy woman, life must go on. So, you like soups. Don't we all, yes! I have one for you to try out. It has a Caribbean Style of its own, which I know the taste will be to your liking. Here we go:
Shrimp Stew (Caribbean Style )
INGREDIENTS:
1 tablespoon annatto oil combined with 2 tablespoons olive oil
1/2 cup alcaparrado or manzanilla olives
1 16-ounce can whole tomatoes, drained and roughly chopped
2 teaspoons black pepper
1/4 cup basic recaito
3 ounces smoked ham, cut into small dice
2 pounds medium shrimp, peeled and cleaned
3 bay leaves
1 cup tomato sauce
2 teaspoons salt
Heat the oil in a soup pot. Add the recaito, bay leaves, alcaparrado, and ham. Saute over medium-high heat for 3 minutes. Add the tomato sauce and canned tomato. Bring the mixture to a boil, reduce the heat to medium, and add the shrimp. Cook until the shrimp turn pink, about 5 minutes. Stir in salt and pepper and cook 2 minutes more. enjoy!!!!!!!!

my favorite soup has to be chicken noodle. my grandmother who i spent my childhood with made chicken noodle soup quite often, mm mm much better than the canned soup, but unfortunately she passed away three years back and i have not been able to enjoy her love or food.

Tomatsoppa med crème fraiche är totalt underbart. Och grönsakssoppan som mamma gör. Men min favorit är fisksoppan vi gör varje sommar på vårt sommarställe på Åland. Den kräver nämligen många abborrar, och vi har ett gemensamt fiskekort med min pappas syskon. Det är seriöst världens godaste fisksoppa: inget kött (det silas allt bort och bara spadet används) men krämig och underbar, speciellt med åländskt svartbröd till.
ReplyDeleteEtt gott sopprecept jag råkade snubbla över följer! Det är dock en väldigt stor sats, men den håller bra i kylen flera dagar :) Dessutom påstås det att den här soppan bränner fler kalorier än den ger...nåjo.

1 medelstort kålhuvud
4 morötter
1 selleristjälk
2 burkar tomatkross (600-800g/st)
2 (grön)pepparkorn
2 påsar kålsoppa
Tärna och/eller skär upp grönsakerna. Lägg i en kastrull och tillsätt så mycket vatten att de täcks helt och hållet. Häll i soppspåsarna och låt koka i en timme.
(Det är faktiskt godare än det låter!)

And there are so many dishes that you could make with soup but I was interested in sending you something a little bit different since everyone is posting soup recipes. I'd like you to try one of my favorite Caribbean Pasta and Seafood Salad. Here is the following things you need:
1½ tbsp. lemon juice
1 tbsp. olive oil
2 c. elbow macaroni, cooked
½ c. shrimp (cooked)
½ c. diced crab meat (cooked)
½ c. diced lobster meat (cooked)
2 hard boiled eggs, chopped
2 tbsp. green pepper, chopped
2 tbsp. roasted red peppers, chopped
2 tbsp. onion, chopped
½ c. celery, chopped
½ c. tomato, chopped
¼ c. stuffed olives, chopped
1 tsp. salt
1 tsp. coarse black pepper
½ c. salad dressing or Mayo
Mix lemon juice, olive oil and combine with pasta. Chill several hours, stirring occasionally. Fold in Mayo or dressing and the rest of the ingredients. At this time you can serve or chill for later. Arrange on crisp salad greens. Have a nice day.

ReplyDeleteYep, soups are yummy! Tomorrow we will have salmon soup with home made "Ålandskt svartbröd"
after sliding down the snowy hill with the kids. Snowy winter and warm soup is an excellent match :D
